Lark Single Cask Strength LD113 Distilled By Kristy Lark Bottled Feb 2010

 

An extremely special single cask of Lark whisky bottled all the way back in February 2010. This cask was distilled by Kristy Lark, Bill Lark's daughter, who has since gone on to open the Killara distillery. This edition is a 500ml expression bottled at 58%.

It’s impossible to mention the Lark brand without discussing it’s namesake Bill Lark. Often heralded as the godfather of modern Australian whisky, Bill's impact on the current Aussie whisky boom cannot be understated. In 1838 the Tasmanian governor John Franklin declared a prohibition against distillation in Tasmania, a prohibition that would last until 1990 when, after a period of lobbying the Tasmanian government, Bill would have the law repealed. For the first time in over 150 years it was legal to distill spirits in Tasmania and in 1992 Bill began experimenting with everything from the distillation of Tasmanian bush liqueurs to single malt whisky. This experimentation would culminate in 1998 with the first “Lark” single malt whisky commercially available. Throughout the next two decades, Bill and his family would build Lark from the ground up before the distillery was acquired in 2018 by Australian Whisky Holdings.

 

Purchased for AU$10.7 million, the Lark distillery was sold to Australian Whisky Holdings, who also purchased the Nant group. This combination of distilleries allowed AWH to revamp the Lark brand and increase their production massively. Along with the purchase of Shene estate in 2021, AWH renamed their company to “Lark” transforming the name from just a distillery to a high quality brand. Encompassing the Nant Bothwell distillery, Lark Coal River Valley distillery and the recent Shene Estate, the Lark company has Australia’s largest capacity for craft single malt whisky production. Throughout the last few years Lark has placed a larger focus on its barrel program, with a flood of special cask aged whiskies being released. From rum to sherry, shiraz to amaro and even Chinotto soda matured!
