This whisky was matured in Cask No. 007, a 100-litre sherry cask, with a limited outturn of just 215 bottles. Bottled at 50% ABV in 2016, each bottle is hand-numbered and signed by Master Distiller Brian Hollingworth.

Black Gate

Founded in 2009 by husband and wife duo Brian & Genise Hollingworth, Black Gate is a small distillery in Mendooran, NSW. Producing both single malt whisky and rum, Black Gate utilises two small direct fired copper pot stills, creating a heavy and oily style of spirit. Production is currently seasonal, with summer being reserved for rum and winter for single malt. The first released single malt was bottled in 2015 after maturing in an ex-sherry cask. Black Gate uses a variety of cask types but typically favours port, sherry and bourbon casks with a smaller quantity aged in wine casks such as shiraz.  
 
Previously Black Gate utilised Tassie peat smoked barley but have recently switched to heavily peated barley from Scotland. Combined with the direct fired stills, the newmake produced has been noted as one of the best examples of peated Australian whisky. It is easy to see why a number of both domestic and international independent bottlers have purchased Black Gate casks, most notably being the 2021 That Boutique-y Whisky Company Australia series. Additionally, their rum has seen considerable demand with Boutique-y also selecting it for their rum label.
